尽量选择清淡汤底。选择汤底时不妨放弃油脂高又易上火的红油麻辣锅,除了清汤锅底,海鲜锅底也是低脂又清淡的选择。


荤素搭配合理。食材的分量建议50%蔬菜和谷类,25%肉类以及25%淀粉类。蔬菜的种类尽可能多样化,如选择对身体益处较大的菠菜、西兰花、生菜等。主食方面,建议以全谷根茎类如:玉米或马铃薯取代白米饭和面食。



选择油脂较少的肉类。选择肉类时最好选一些脂肪含量较低的,如鱼虾、鸡肉等,最好少吃动物内脏或加工肉类食品。



少吃加工食品。尽量少吃如丸子类、蟹柳等加工食品,里面多含有淀粉和盐,隐藏卡路里非常高。



不要后喝汤。煮过肉的火锅汤含有很多嘌呤 (Purine) 和脂肪。煮得越久,嘌呤得度数越高,不利于有尿酸得人。如果喜欢喝汤,建议可以在开始涮肉前先舀一碗汤出来。



蘸料隐藏热量陷阱。建议选择青葱、辣椒或蒜米等原材料,搭配黑醋或酱油作为蘸料。避免选择高热量的豆瓣酱、沙茶酱及芝麻酱。



食物煮涮时间合适。叶类蔬菜切忌长时间在火锅里煮,在沸腾的锅中稍微焯烫即可,时间过长会增加营养素流失,也会失去蔬菜的口感。肉类食物一定要彻底煮熟,否则容易将细菌、寄生虫卵随食物进入肠胃而导致肠胃疾病的发生。


避免吃火锅时过多饮酒和喝冰饮料。建议选择白开水、绿茶、柠檬汁等帮助消化的饮料。避免选择酒精饮料或糖份饮料等会加重消化负担的饮料。



三类人吃火锅要注意

  1. 痛风患者。海鲜、动物内脏都属于高嘌呤食物,涮火锅的汤嘌呤也很高,因此,痛风患者千万不要喝火锅汤。

  2. 胃病患者。胃病患者吃火锅不要使用辣椒、芥末等太刺激的调味料,减少对胃的刺激,同时不要喝酒。

  3. 咽喉炎患者。吃的食物不要过烫,趁温热的时候食用才是最好的。
